Easy Skillet Asparagus

Paleo Asparagus

We're always looking for delicious, fast, easy gluten-free/paleo/primal recipes and this skillet asparagus delivers. It takes well under 20 minutes to prepare and the asparagus turns out fantastic. Unfortunately, I'm not sure how it tastes the next day, since we've never had leftovers!

Ingredients

  • 1 bunch asparagus
  • 4 strips bacon
  • 2 tablespoons dijon mustard

Directions

  1. Pan fry the bacon
  2. While the bacon is frying, wash the asparagus and roughly chop (or hand break) it into 1 or 1 1/2 inch sections. Discard the bottom-most piece of the asparagus stalk.
  3. When the bacon is nice and crispy, remove it from the skillet. Pour off and discard half of the bacon grease. Throw all the asparagus into the skillet and saute it for 6-8 minutes until it turns bright green.
  4. Pour the asparagus into your serving dish. Crumble the bacon over the asparagus. Add the dijon mustard on top. Stir.
  5. Enjoy!

Notes
  • This recipe is gluten-free, paleo, and primal. Yay!
  • I cooked this on an iron skillet, but you can use whatever skillet is convenient. 
  • You can swap the dijon mustard for stone mustard if you wish.
  • You could omit bacon... but why? Sub in some coconut oil if you remove the bacon.
